Preparing your Mozambique Piri Piri Prawns Recipe can be a tedious task if you let it. I choose not to let it be tedious. Put some nice tunes to keep you company while you prepare you Mozambique Peri Peri Prawns. Each prawn has a vein that needs to be removed. To devein a prawn, use a small sharp knife to make a slit along the middle of the back to expose the dark vein and pull it out. You need to leave the head and tail on as they add amazing flavor. If you buy prawns without heads and tails your Mozambique peri peri prawns will not taste authentic. Deveining the prawns will take some time and it is a rather dirty time consuming task. It is for this reason that I suggest pouring yourself a nice glass of dry white wine and hitting play on your preferred playlist. Music is a very big part of any cooking that I do. It makes the entire experience that much more enjoyable.
Mozambique Piri Piri Prawns Recipe
Ingredients:
1 kg prawns with heads and tails attached.
1 bottle SPAIS Mozambique Piri Piri
2 Lemons
1 teaspoon peri peri powder or 4 fresh red chilli’s (only if extra heat is required)
1 cup dry white wine
150 grams butter
1 teaspoon Salt
Method:
1. Add the juice of all 5 lemons to a big mixing bowl.
2. Mix in the peri peri sauce and salt.
3. Melt the butter in the microwave, add to the above mixture and stir well
4. Devain the prawns as described above placing them in the marinade as you devain them
5. Let them soak in the marinade for as long as possible.
6. Heat a baking tray and have it ready to keep the prawns in as they come out the pan.
7. Pour the prawn marinade into a pan and boil down ( this is what you will pour over the prawns once they are fried)
8. Heat a heavy based pan on the stove until it is very hot and add some extra butter and garlic, place just enough prawns into the pan to cover the bottom, pouring the juice back into the marinade pot as you go along.
9. Fry the prawns briefly until they change color, do not over do it or they will dry out. Prawns should be cooked over in a very hot pan for 2-3 minutes.
10. Pour the reduced marinade over the prawns and serve immediately with a good serving of rice and a nice fresh green salad.
